Warm Cabbage Salad

Accidentally made this lunch the other day and what a happy accident 🤤 I had a head of red cabbage that was about to go bad so I sliced it up, threw it in a pan with avocado oil, salt & pepper and cooked it for about 5 minutes. Then cubed a small sweet potato and threw it in another pan with avocado oil, salt & pepper and let them soften and brown up. Then I threw together a quick vinaigrette 1 Tbs avocado oil 1 Tbs maple syrup 1 Tbs Dijon mustard 1 tsp balsamic vinegar Salt & pepper to taste Threw it on top of the cabbage and sweet tater and sprinkled with chopped chives. Soooo good. I remember thinking my mom was so strange that she liked cabbage and would willingly eat it 🙄 truth is, I never tried it! I wish I would have sooner because now it’s something I love for a cheap and easy meal!!! Do you like cabbage?
