Dreaming of this strawberry French toast casserole I made over the weekend 🍓 This is one of my favorite ways to make breakfast because you make it the night before, throw it in the oven in the morning and done! Strawberry French Toast Casserole 4 cups bread, cubed ( better when it’s stale, can use ANY type of bread – we did whole wheat ) 5 eggs 3 oz cream cheese, cubed ( optional ) 1 tsp vanilla extract 1 cup milk 1 cup strawberries ( left them whole because ours were our little fresh picked ones but slice if large ) 1/2 cup puréed strawberries 1/4 cup pure maple syrup Grease bottom of pie pan ( can also double recipe to make 9×13 size ) Place cubed bread in greased baking dish. Whisk together eggs, milk, vanilla extract, strawberries, and cream cheese. Pour mixture over bread cubes. Try to make sure it coats all bread on top. Cover and place in the fridge over night. In morning, preheat oven to 400F. Bake for 25-30 min ( 45-60min if 9×13 pan ). Mix together puréed strawberries and maple syrup. Drizzle over casserole as soon as it’s out of the oven. Enjoy!
