Valentine's Day is a perfect occasion to show love through thoughtful gestures, and what better way than with a homemade breakfast treat? These gluten-free breakfast cookies combine wholesome ingredients like oats, bananas, and chocolate chips, topped with a charming heart-shaped strawberry. They are easy to make, delicious, and ideal for starting the day with a touch of sweetness and care.

Ingredients You Will Need
2 ripe bananas, mashed
2 cups gluten-free oats
½ cup chocolate chips (choose dairy-free if preferred)
Fresh strawberries
Step-by-Step Preparation
Preheat the oven to 375°F and line a baking sheet. In a medium bowl, mash the banana with a whisk or the back of a fork until there are minimal lumps. Mix in the oats and chocolate chips.
To make the hearts, cut a V shape in the top of the strawberry to remove the leaves. Now slice the strawberry in half so it creates two hearts, making sure to cut the opposite way of the V cut in the top to keep two heart shapes.
Scoop the cookie mixture onto the lines baking sheet and lightly press flat. Add a strawberry on top lighting pressing it into the cookie. Repeat for all the cookies.
Bake for 20 minutes. Let cool on the pan for 5 minutes before serving.
Tips for Perfect Cookies
Use ripe bananas for the best natural sweetness and moisture. Overripe bananas with brown spots work great!
For extra flavor, add a teaspoon of cinnamon.
Store leftovers in an airtight container at room temperature for up to 3 days or freeze for longer storage.
Serving Suggestions for Valentine’s Day
These breakfast cookies are delightful on their own but can be paired with other treats to create a memorable Valentine’s morning:
Serve with a bowl of yogurt to add some protein.
Serve as an after school snack with string cheese and pepperoni.
Wrap a few cookies in a pretty box or bag as a thoughtful gift for loved ones.
Making It Your Own
Feel free to customize the recipe to suit your preferences or dietary needs:
Swap chocolate chips for dried cranberries or chopped nuts.
Add a teaspoon of chia seeds or flaxseeds for extra omega-3 fatty acids.
Experiment with spices like nutmeg or ginger for warmth and depth.
