There’s something so yummy about grilled veggies so when summer hits, we love to cook on the grill! This recipe is so simple and can be tailored to whatever you have on hand.
1 lb chicken breast, cut into 1 inch cubes 1/4 cup pesto ( I used jar @costco but could use any seasoning you like ) Any veggies you’d like cut into rectangular chunks – We used cabbage, bell peppers, zucchini, and yellow squash.
Mix the pesto and chicken together until chicken is coated. In a separate bowl, mix together veggies & oil ( I used avocado oil ) sprinkle with salt and pepper to taste. Stick alternating pieces of chicken and veggies onto a skewer. Grill for 5 minutes, flip and grill additional 5 minutes.
These are great wrapped in a tortilla, on top of rice, or eaten as is! Husband loved, baby loved, and toddler ate only the chicken.
