Peanut Butter Cookies

I’ve got a major sweet tooth ( and so do my kids! ) so I’m always trying new recipes for baked goods. Peanut butter cookies remind me of childhood, I always remember my Granny having them in her cookie jar! Do you have a food that reminds you of someone? These are a little different because there made with coconut flour and honey. But they are still yummy and picky eater approved!!


Peanut Butter Cookies

1/2 cup @crazyrichardspb creamy peanut butter 1/4 cup @naturenates honey 1 egg 1/2 cup coconut flour 1 tsp vanilla extract 1/2 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt Preheat oven to 350°F. Mix together all wet ingredients in a large bowl and set aside. Mix together dry ingredients in a small bowl. Gradually mix the dry ingredients into the wet. Once combined scoop rounded tablespoons and roll into a ball. Place on a lined baking sheet. Continue to roll placing cookies 2 inches apart. Take a fork and rub oil on the back. Imprint the cookie with the back of the fork making hash marks ( the classic sign of a peanut butter cookie!! ) Bake cookies 8-10 minutes. Let cook on the baking sheet for 2 minutes.
