Butternut Squash Gluten Free Pizza

Orange you glad there are veggies in this pizza crust?! 🍕 You all know we're crazy pizza obsessed over here and I'm always looking for ways to get more veggies into my kiddos bellies!


Butternut Squash Pizza Crust

1 1/4 cup roasted butternut squash ( roast in the oven until soft enough to mash )

2 cups flour ( we used gluten free ap flour )

1 tsp baking powder

1 tsp salt

1 cup shredded cheddar cheese

2 eggs


Preheat the oven to 350°F and line a large baking sheet with parchment or a silicone baking mat. Mix together flour, baking powder and salt in a medium bowl. In a large bowl, mash the squash with a fork. Add the cheese to the squash along with the eggs.


Gradually mix in the dry ingredients into the wet. Continue mixing until it forms a dough. Roll the dough out onto the large baking sheet. You could also use a pizza pan if you want a round shape! It will take up the entire baking sheet. Bake for 20 minutes. Flip the crust over carefully ( you might want to use two spatulas! ) and cook the other side for an additional 12 minutes.


Take the pizza out and add your preferred toppings. You can find ours below! Broil until the toppings are brown and bubbly and enjoy!


Optional Pizza Toppings

1 cup ricotta cheese

1 tsp finely chopped garlic

1 cup shredded mozzarella cheese

1/4 cup shredded parmesan cheese

1/4 cup diced orange bell pepper
