Late night craving for these zucchini brownies 👀 Are you team edges or middle of the pan?
1/2 cup coconut oil ( or vegetable oil )
3/4 cups sugar
1 tsp vanilla extract
1 1/2 cups gluten free flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1 tsp salt
1 cup finely shredded zucchini ( don’t remove moisture! )
1 cup semi-sweet chocolate chips
Preheat oven to 350°F and grease a 9x13 pan. In a large bowl combine oil, sugar, and vanilla until incorporated.
Add flour, cocoa, baking soda, and salt. Mix until combined then add in zucchini and egg. Allow batter to rest for 5 minutes.
Add in chocolate chips and stir again. Spread brownie mixture into the pan and bake for 25-30 minutes.
