We’ve been asked a lot what our new favorite #GlutenFree meal is and hands down it’s Chicken Cordon Bleu!! My celiac kiddo asks for it at least once a week. It’s also the special meal he requested for this birthday. So basically, it’s pretty amazing!
I used to think Chicken Cordon Bleu was really complicated to make but it turns out it’s pretty dang easy! A couple steps and you’ve got a delicious meal.
Chicken Cordon Bleu
3 boneless skinless chicken breasts, sliced in half lengthways to make it thinner
6 slices swiss cheese
6 slices deli ham
1 egg, beaten
1 cup gluten free bread crumbs
1/2 cup gluten free flour
salt & pepper
Preheat the oven to 375°F and line a baking sheet with a silicone mat or parchment paper. In a medium bowl, add the breast crumbs, salt and pepper, mid and set aside.
Lay your chicken breast flat and add a slice of cheese and a slice of ham on top. Roll the chicken breast up starting at the short end all the way to the other side.
Dip the chicken into the beaten egg and then coat in the bread crumb mixture. Place it on the lined baking sheet seam side down. You can use toothpicks to hold it together if you want!
Bake for 20-25 minutes or until the chicken is cooked through.
