These are decadent, delicious, and downright a must make this summer!!
Cherry Cheesecake Pops
🍒 1 cup cherries, pitted and halved
💛 2 Tbsp + 1/4 cup maple syrup
🤍 8 oz. cream cheese
✨ 1/2 cup plain Greek yogurt
💕 1 tsp vanilla extract
🥛 1 cup milk
🍪 graham crackers or cookies
In a saucepan over medium low heat, cook the cherries and 2 tablespoons maple syrup. Let reduce and cherries break down a bit to create a syrup. Cook for about 5 minutes. Set aside and cool.
I’m a large bowl, cream together the cream cheese and 1/4 cup maple syrup. Add in the vanilla. Gradually add in the milk and mix until it becomes a creamy liquid.
Crush some graham crackers or cookies in a plastic bag. Don’t need to pulverize them, chunks are ok! Set aside and get our a popsicle mold.
Add a heaping spoonful of the cream cheese mix into the bottom of the popsicle mold. Add a spoonful of cherries on top and keep layering. Once you get about three quarters full, add the crushed Graham’s and push them in so they stick in the liquid part a bit. Insert your popsicle stick and freeze at least 4 hours or until set.
