It’s #nationaldonutday 🍩 and we couldn’t help but celebrate 🥳 While I certainly won’t turn down a donut ( custard filled donut with chocolate frosting to be exact ) sometimes it’s fun to make a healthier version at home!
These are mini chocolate black bean donuts with yogurt frosting! You’d never guess there were beans in these delicious little things.
1 can black beans, drained and rinsed very well 2 tbsp cacao powder 1/2 cup oats 1/4 tsp salt 1/3 cup pure maple syrup or honey 1/4 cup coconut oil 2 tsp pure vanilla extract 1/2 tsp baking powder
1/2 cup semi-sweet chocolate chips
Preheat oven to 350°F. Put all ingredients minus chocolate chips in a food processor. Blend until completely smooth. Hand stir in the chips and spread into a greased a mini donut pan ( or a 8×8 baking dish ). Bake 16-18 minutes. Let cool completely and dip tops in yogurt. Sprinkle with sprinkles and enjoy!
