Gluten Free Carrotless Carrot Cupcakes

Carrot Cupcakes minus the actual carrot! Anyone else just not a fan of carrot cake?! These are so much fun and can be made with your favorite chocolate cake ( or brownies! ). Check out how cool it looks when you slice through the middle!!

HOW TO:

1️⃣ Start by making your favorite chocolate cake recipe as directed. After baking and cooling, use a knife to carve a small cone out of the top center of the cupcake. Don't cut all the way to the bottom! Remove the center and discard ( and by discard I mean eat! ) Do this to all of the cupcakes.

2️⃣ Color your icing orange and green and decorate. Put the orange icing in a plastic piping bag and the green in another. Snip off the end of the bag. Squeeze the orange icing into the bottom of the hole in the cupcake and fill to just above the top. Squeeze small dots and pull the bag straight up on the top of the orange icing to create the green leaves.

3️⃣ Enjoy your carrot cupcake garden! If you slice them down the middle you will find a carrot buried in the chocolate "ground."

You can totally use box mix and a can of frosting to make this as simple as possible!

Anyone remember these from years ago when I did Darling Delivery activity kits?! I miss those!!
