This perfectly sweet gooey goodness is a great way for your kids to try blackberries.
My kids already LOVE blackberries but they are unsure of mixed foods when they are all touching. This cobbler was a great way to get them to try something new! Verdict: They ate it up!! 😋 You could easily make this not gluten free by swapping the GF flour for all-purpose.
💛 Gluten Free Blackberry Cobbler 💛
2 cups frozen or fresh blackberries ( I always use frozen since they are much cheaper! )
1/2 cup sugar
1 tablespoon cornstarch
1 cup 1-to-1 GF flour
2 teaspoons baking powder
1 cup milk
1 egg
1 teaspoon vanilla extract
3 tablespoons coconut oil, melted
Preheat the oven to 375F. If using frozen berries, let them sit in the fridge for a couple hours to slightly thaw. Put the berries, sugar, and cornstarch in a bowl and mix it so the berries are coated. Set aside and let them sit for 15 minutes.
In another bowl, mix together the flour, baking powder, milk, egg, vanilla, and oil. Whisk until combined and no lumps are left.
Put the berries in the bottom of 3 mini pie pans ( or you can use one large pie pan ) and spread them evenly on the bottom. Spoon the batter on top of the berries. It doesn't need to be perfect just make sure it's even and not in uneven lumps. Use the back of a spoon to spread the batter if needed.
Bake in the oven for 45-55 minutes or until golden brown on top. Serve warm with a dollop of ice cream!
