spaghetti squash alfredo

Making my husbands dreams come true by making a healthy version of Pasta Roni 😆 He loves it and I do not 🙅🏻‍♀️ So last time I tried making spaghetti squash and he snubbed it, he said “You know what, I think I don’t like it because spaghetti calls for thicker noodles and the spaghetti squash is more like Pasta Roni. Maybe try it like that and I’ll like it.” CHALLENGE ACCEPTED!!!
 

 
So I used our #eatprettycoloroftheweek spaghetti squash and slathered it in a cashew cream sauce! It was a huge hit for the whole family 🙌🏼 I’m so glad I took my picky eater husbands suggestion and made something he enjoys too!
 

 
Cashew Cream Sauce
 

 
1/2 cup raw cashews, soaked in boiling water for 30 minutes, drained and rinsed
 

 
1 cup milk of choice
 

 
1/4 cup Parmesan cheese
 

 
2 tbs nutritional yeast
 

 
1 tsp sea salt
 

 
1 garlic clove, peeled
 

 
Blend all ingredients until creamy and smooth. Mix the spaghetti squash with the cream sauce and enjoy!
