OMG YOU GUYS!!!! My veggie hating husband just willingly ate half a head of cauliflower 😳 like I had to bat him away to get this picture because he wanted more!!! AND my toddler happily ate it and asked for more!!!

 We’ve tried cauliflower pizza and I could never quite get it not cauliflower tasting enough for my picky eater hubs – until now! It’s super simple and such a hit!!

 CHEESY CAULIFLOWER BREAD

1 large head of cauliflower
 4 eggs
 1 1/2 cups shredded mozzarella cheese
 1/2 cup parmesan cheese
 3 tsp dried oregano
 1 tsp garlic salt
 salt and pepper to taste
 1 cup mix of mozzarella and parmesan cheese, for topping
Preheat oven to 425 F degrees. Take 2 large baking sheets and line with parchment paper. Spray a little oil on it to make sure it doesn’t stick! Roughly chop cauliflower into florets. Add the florets to your food processor and pulse until cauliflower resembles rice.

 Place the cauliflower in a microwavable container and cover with lid. Microwave for 10 minutes. If there’s any moisture, pat with paper towels.
Place the microwaved cauliflower in a large bowl and add the eggs, mozzarella, parmesan, oregano, garlic salt, salt and pepper. Mix everything together.

 Separate the mixture in two and place each half onto the prepared baking sheets and shape into either a pizza crust, or a rectangular shape for the breadsticks.

 Bake the crust (no topping yet) for about 22 minutes or until nice and golden. Once golden, sprinkle with remaining mozzarella cheese and put back in the oven for another 5 minutes or until cheese has melted.

 Serve with your favorite tomato sauce and enjoy!!!
