Burrito bowls have my heart 🍲 especially when they’re basically just leftovers thrown together!! I took out leftover air fryer chicken and cubed it to warm up in the oven along with frozen corn, a scoop of salsa, a drizzle of plain Greek yogurt, all on top of cilantro lime quinoa I cooked for a minute in my instant pot. So simple and so yummy!!!

1 Minute Cilantro Lime Quinoa
1 Tbs avocado oil
3 green onion sliced thin
1 clove garlic, minced
1 cup rinsed quinoa
1 1/4 cup low sodium chicken broth
1 tsp sea salt
1/2 tsp ground black pepper
1/4 cup fresh cilantro, chopped
Juice of 1 lime
Turn instant pot to sauté function. Put avocado oil in the pot and sauté green onions for about 1 minute. Add garlic and cook until fragrant, about a minute. Pour in chicken broth, quinoa, salt and pepper.
Set instant pot to manual 1 minute. Let it NPR for 10 minutes, release any remaining steam. Open lid and toss in cilantro and lime juice. It’s ready to be eaten as is or in a burrito bowl!
